Chives are an easy herb to grow in your own garden, even if you only have a patio.
But chives do poorly when simply dried since their flavor gets lost completely.
So, here’s one of the best ways to preserve this tasty herb so you can enjoy it year-round.
Here we discuss tools you need, ingredients, and step by step instructions to make chive butter.
Let’s Dive in…
Chive Butter Recipe
This particular method of making chive butter is on the stove top and making individual cubes of butter to use.
Tools you need:
- Small cast iron pan or small sauce pot
- Cutting board & knife
- Ice cube trays or silicon butter molds.
Ingredients:
- 8 oz block or 2 sticks of Salted Butter
- 1/4 cup chopped Chives
Instructions:
- Place your sauce pot or small pan on low heat
- Put all the butter in and allow it to melt. Should only take a few minutes.
- Finely chop your chives
- Once the butter is melted add chopped chives to the pot/pan. Stir very well with a whisk or spatula.
- Once stirred and melted, take off the heat and pour into clean ice cube trays or silicon molds of your choice.
- You may need to scoop chives out and evenly distribute them between each cube. Sometimes the chives like to pour all out at once.
- Once poured, place in your freezer overnight.
- The next morning you can pop the cubes out and place in a bag to store in the freezer. You can also vacuum seal them if you wish to prevent freezer burn.

How to Use Chive Butter
Wherever you use butter to cook, you can use this chive butter recipe.
Sautéing, mashed potatoes, on top of pizza crusts, roasts or other meats, etc.
Once frozen, it’s best to cook with this butter, since the water content in the chives will make this butter watery if you let it come to room temperature for soft spreads.
You can easily let it thaw in the fridge without it becoming a mess.
It’s a great way to elevate your normal dishes you make, while keeping as much as the flavor of the chive preserved.
Butter can last in the freezer for months, especially if wrapped well or vacuumed sealed.
That’s It!
Growing chives is an easy endeavor in the garden but preserving it can be a little tricky.
Since chives are always served fresh, preserving them in butter can help maintain their flavor.
