This recipe combines both lemon balm and chamomile to give you a refreshing floral lemonade to enjoy this summer.

Lemon Balm Lemonade Recipe

What to harvest from the garden

  • Lemon Balm (Melissa Oficinalis)
  • German Chamomile

Tools you need

  • Half Gallon pitcher/jar
  • Smaller mug or jar to steep tea in
  • Small Strainer

Ingredients:

This makes one 1/2 Gallon.

Fresh Herbs:

  • 1 Cup (about one handful) of freshly picked lemon balm
  • 10 flowers of freshly picked chamomile (optional)
  • 1/3 cup lemon juice
  • 1/4 cup non gmo sugar or honey (can add more to taste)
  • 1 teaspoon good celtic sea salt or pink himalayan salt (optional)
  • Water

Dried Herbs:

  • 1/2 cup of coarsly chopped dried lemon balm
  • 1 tablespoon of dried chamomile (optional)
  • 1/3 cup lemon juice
  • 1/4 cup non gmo sugar or honey (can add more to taste)
  • 1 teaspoon good celtic sea salt or pink himalayan salt (optional)
  • Water

Instructions

  1. Make the tea: in a pint-sized mug or jar place your herbs in it and pour hot water over.
  2. Let herbs steep 10-15 minutes.
  3. In your half gallon jar, add lemon juice, sugar, salt.
  4. Strain tea and pour it into the half gallon jar over the lemon juice & sugar & salt.
  5. Stir to dissolve.
  6. Fill the rest of the jar with water until full.
  7. Refrigerate for best taste. Add fresh lemon balm leaves when serving.
  8. Enjoy!
