Bread Machine Pumpkin Bread

This recipe works on any machine that can hold up to a 2-pound loaf.

It’s a great dump and go recipe, using basic pantry ingredients and tastes just like the ones that come out of the oven!

Here I go into ingredients you need and a few tips to take when making the Bread Machine Pumpkin Bread loaf this season.

Let’s Dive In…

Pumpkin Bread in the Bread Machine Recipe

Tools you need

  • Bread Machine (one that holds up to 2 pound loaves preferred)
  • Flour sifter

Ingredients

  • 1- 15 ounce can of pumpkin puree, plain
  • 1/2 cup plain or vanilla yogurt
  • 1/2 cup of avocado oil or melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoon pumpkin pie spice or cinnamon
  • 1/2 cup white sugar
  • 1/3 cup brown sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Place all the ingredients into the bread pan, in the order listed. You can use a flour sifter if you wish, to make ensure there are no clumps in the flour, baking powder, or baking soda.
  2. Set your machine to the Quick Bread Cycle, choosing light or medium crust. Medium crust is shown in the photos. This cycle should be about 1 hour and 30 minutes (or so) long.
  3. Press Start. Be sure to check it a couple minutes into the mixing to make sure it is being thoroughly mixed (see note below). Simply use a spatula to push stuck flour out of the corners.
  4. Once mixed, allow bread machine to do the work. Once the bread machine beeps, alerting you that it’s completed, immediately pull out of the bread machine and place on a cooling rack.
  5. Allow to cool for an hour or two before slicing. It falls apart if you cut into it when it’s too hot. Enjoy!
  6. Leftovers can be refrigerated or frozen.

*Please note, since there is not liquid (besides a bit of oil) you will need to stick around the first few minutes the machine mixes the batter to make sure no clumps of flour are getting stuck in the corners. You can alternatively mix everything in a bowl prior to placing it in the bread machine.

That’s It!

This recipe is a variation of Banana Bread in the Bread Machine found this this book here: The Bread Lover’s Bread Machine Cookbook.

I recommend this book to anyone who wants to bake a large variety of breads using a bread machine.

This version of pumpkin bread is not included in the book, so make sure to write this one down. A sourdough version of pumpkin bread is included in the book, though.

Enjoy!
