Zucchini & Rice with Herb Salt | Rice Cooker Recipe

Pairing well with just about any meal, this is a savory rice recipe that makes your plain white rice even better.

One zucchini, with some delicious homemade herb salt, onion powder, and butter is all you need for this rice cooker recipe.

Zucchini & Rice, Rice Cooker Recipe

Tools you need

  • Colander with a bowl
  • Cheese shredder
  • Rice cooker

Ingredients

  • 1 medium zucchini, shredded, drained
  • 2 cups white rice, rinsed (please use the measure cup that comes with the rice cooker)
  • Water, enough for 2 cups per your rice cooker
  • 2 teaspoons of herb salt
  • 1 teaspoon of onion powder
  • 2 tablespoons of butter

Instructions

  1. Start by shredding your zucchini. The smaller grate on a cheese grater works very well. Place your shredded zucchini ina colander with a bowl underneath. Sprinkle lightly with salt and let stand for 15 mins.
  2. After those 15 mins, squeeze as much liquid out of the zucchini and set aside.
  3. Measure out 2 cups of rice per your rice cooker. Every rice cooker should come with a specific measuring cup, and this is what should be used. Rinse the rice well, place in your rice cooker.
  4. Fill your rice cooker with water until it reaches the 2 marker.
  5. Add your zucchini, herb salt, butter, and extra onion powder on top of the water.
  6. Insert your rice bowl and cook on plain rice cycle.
  7. Stir well once it’s done, allow to cool before serving. Enjoy! Refrigerate any leftovers.
