Zucchini & Rice, Rice Cooker Recipe
Tools you need
- Colander with a bowl
- Cheese shredder
- Rice cooker
Ingredients
- 1 medium zucchini, shredded, drained
- 2 cups white rice, rinsed (please use the measure cup that comes with the rice cooker)
- Water, enough for 2 cups per your rice cooker
- 2 teaspoons of herb salt
- 1 teaspoon of onion powder
- 2 tablespoons of butter
Instructions
- Start by shredding your zucchini. The smaller grate on a cheese grater works very well. Place your shredded zucchini ina colander with a bowl underneath. Sprinkle lightly with salt and let stand for 15 mins.
- After those 15 mins, squeeze as much liquid out of the zucchini and set aside.
- Measure out 2 cups of rice per your rice cooker. Every rice cooker should come with a specific measuring cup, and this is what should be used. Rinse the rice well, place in your rice cooker.
- Fill your rice cooker with water until it reaches the 2 marker.
- Add your zucchini, herb salt, butter, and extra onion powder on top of the water.
- Insert your rice bowl and cook on plain rice cycle.
- Stir well once it’s done, allow to cool before serving. Enjoy! Refrigerate any leftovers.
