Leftover Ham & Potato Soup | No Dairy

Move over ham sandwiches: this version of ham and potato soup comes together in about 20 minutes and has no dairy, making this an easy option for leftover holiday ham that won’t leave you with food fatigue.

This is best when you are on the last bit of that ham, and your stuck with the bone, juices, and just a little bit of ham slices left.

All you need now is a few potatoes, a couple onions, and some delicious broth and you are well on your way to this flavor packed soup.

Leftover Holiday Ham and Potato Soup Recipe, without dairy

Tools you Need

  • Dutch oven or your preferred stock pot

Ingredients

  • 2-3 tablespoons of preferred oil
  • 2 medium onions, chopped
  • 4 medium potatoes, peeled, cubed to 1-inch pieces
  • At least 1 cup of leftover holiday ham, cut into bite size chunks; if you have the bone include that too
  • 1 quart (1 box) of broth of choice
  • Salt, to taste
  • Garlic powder, to taste
  • Dried celery leaves or parsley, to taste (you can alternatively sauté chopped celery with the onions if you wish)

Instructions

  1. Place your Dutch oven or stock pot on medium heat. Place oil on the bottom of the pan. Allow to heat up while you do step two.
  2. Peel and chop your onions. Place into the pot. Allow the onions to cook for a couple of minutes until softened.
  3. Peel and chop your potatoes, add to the pot.
  4. Cut your ham up and add that to the pot. Place any bones or juices if you have them.
  5. Pour broth into the pot and bring it to medium high heat.
  6. Season with plenty of salt, garlic powder, and dried celery or parsley leaves. All to taste. Don’t be shy with seasonings.
  7. Allow to simmer for 10-15 minutes or until potatoes are cooked.
  8. Remove from heat and take the bones out.
  9. Enjoy! Serve warm with a side of crunchy bread or sandwiches. Refrigerate or freeze leftovers.

Use both the bone and leftover juices if you have them!

Honestly this soup is so easy it hardly needs a recipe but worth putting the word out there; it’s just so delicious, especially with Honey Baked Hams.

Feel free to add carrots, parsnips, or even some sweet potatoes if you wish to make it even hardier of a meal.
