Nut-Butter Granola | From Scratch, Oven Baked, Basic Granola Recipe

Oven baked granola is easy enough to make regularly at home, often saving you money in the long run.

This recipe is a basic nut-butter recipe that will give you the flexibility to either eat it just as it’s written or add your favorite add-ins, without straying too far from what the recipe intends to make.

Here I go into tools, ingredients, and instructions on how to make your own granola using ingredients that you love to use.

Basic Pantry Granola From Scratch

Tools you Need

  • Mixing Bowl
  • Small sauce pot
  • Cookie Sheet, Parchment paper
  • Mason jar

Ingredients

  • 3 cups of oats
  • 2 tablespoons of chia seeds
  • 1/2 cup crushed nuts: cashews, almonds, or peanuts are best
  • 1/2 teaspoon of salt
  • 1/3 cup coconut oil
  • 1/3 cup peanut butter, or whichever nut butter you prefer
  • 1 teaspoon vanilla extract
  • 1/4 cup maple syrup or honey
  • Optional: you can add as much dried berries, fruits, or coconut flakes as you wish, or add spices such as cinnamon or nutmeg

Instructions

  1. Preheat oven to 300 degree F. Place a parchment paper on your cookie sheet, set aside.
  2. In your mixing bowl, Mix together oats, chia seeds, crushed nuts, and salt in your mixing bowl. Set aside.
  3. In your sauce pot, add coconut oil, peanut butter, vanilla, and maple syrup (or honey). On LOW heat, slowly melt these ingredients together, stirring consistently.
  4. Once melted, pour into your oat mixture. Stir until well combined.
  5. Transfer granola mixture onto cookie sheet. Pat until granola is flat like a pancake, so it bakes evenly.
  6. Bake for 45-50 minutes, until golden brown. Allow to cool on the cookie sheet completely.
  7. Once cooled, store in an airtight container. Should remain good for at least a month in your pantry. Enjoy!

That’s it!

We of course usually eat this with yogurt but use this just like you would any storebought granola or muesli.

If you want really chunky granola (as in, clumps of granola forms) I would adjust the amount of coconut oil and nut butter and see what you can get.

We just prefer the flakier granola, that has a slightly softer crunch than huge clumps.
